Summary:
UIMenuController and its contents are not available to verify or tap from UI Automation.  You should be able to access the 'cut', 'copy', 'select all' buttons for tapping.  You should also be able to tap and verify the text of any custom items you've added to the menu.

There should be a way to access a UIMenuController and its contents from UI Automation.

Actual Results:
There is no way to access a UIMenuController and its contents from UI Automation.
